The Marchesi Code

Form is substance: the cuisine of Gultiero Marchesi

The Marchesi Code traces a network of pathways in the quest and practice of cuisine within insurmountable confines: those of good taste. Since the approach is coherent and unified, not linear or unidirectional, the elements that take on force and value are the nodes, the point of arrival and departure of segments of thought. Segment and network form an indivisible whole within which there exist as many nodes as there are the possibilities of association and combination of ideas and principles. The reader can re-compose at will the frame of the Marchesi system of thought, bound only by the confines of the rigour of Gualtiero Marchesi’s quest, which renders this practice a disciplined art (from discipulus, disciple) which is anything but arbitrary thanks to its set of precise and inviolable rules.
